Buffalo Tri-Tip

WHAT I FOUND IN THE KITCHEN-

1 lb buffalo tri-tip, sliced in to strips
1/4 cup tamari
1 TBS oil + 1 TBS for cooking
2 tsp agave syrup
1/2 tsp ginger powder
1 tsp dried parsley
pepper to taste

WEAPON OF CHOICE- wok

1. Slice your buffalo

2 Mix all the other ingredients in large Tupperware container with a well sealing lid. Add the meat to the marinade. Close the lid and shake the whole thing to coat the meat in marinade.

3. Let the meat marinate in the refrigerator for at least 3 hours.

4. Heat up your wok with 1 TBS oil. Add the meat and marinade. Don’t over cook the buffalo, it is best medium-rare.

I served this with a brown/wild rice mix, steamed watercress and zucchini. It was really tasty! Don’t be tempted to add salt, the tamari is plenty salty on its own!!!
